How to Avoid These Grilling and Smoking Mistakes

Cooking on a BBQ is a time-honored tradition in countries all over the world, bringing people together for a delicious meal. Done right, smoking can deliver incredible flavor to the meats and produce you are cooking, but it can also go horribly wrong if you're not careful. No one wants to eat a burnt brick of meat! Here's what you need to watch out for when cooking on a grill or smoker. 

Too Much Heat 

This is an incredibly common mistake, as many people believe that higher temperatures will help their meat cook faster. While this may be somewhat true, it doesn't mean that the meat will be cooked better. Too much heat can dry out the meat. Cook slowly over low heat to ensure all those delectable juices stay locked inside. It may take a bit longer, but it will be well worth the wait. 

Incorrect Meat Temperatures 

If you like your steak medium-rare, you won't be very happy with a piece of meat that is cooked medium-well, and vice-versa. If the meat is undercooked, it's easy to throw it back on the grill for a few more minutes, but there is no saving an overcooked piece. Use a meat thermometer to ensure you are at the correct temperature, but resist the urge to poke the meat too early, as frequent puncturing lets all the juices out. As a general rule of thumb, you can also go by feel. Press your finger against your forehead to approximate the feeling of well-done meat, the tip of your nose for medium, and the front of your chin for medium-rare. 

If the meat or produce doesn't taste good or have the right texture on its own, no amount of seasonings or sauces will save it. Spend the extra money on high-quality ingredients, and you'll have a much easier time achieving the taste you desire.

Leaving the Lid Open 

Sure, it looks great to see someone dutifully tending to the barbecue, flipping and turning the food over the fire, but this is a common mistake. Without the lid, all of that flavorful smoke you are trying to impart will escape, rather than infusing your meat. Also, most meats only need to be flipped once during cooking, so let the smoke and heat do their jobs. Hands off!
